1. Source of Sodium Alginate

Sodium alginate, also known as sodium alginate and kelp glue, is a byproduct of extracting iodine and mannitol from kelp or sargassum of brown algae. It is a natural polysaccharide carbohydrate.

2. Physical and chemical properties of sodium alginate

1. Form Sodium alginate is white or light yellow powder, almost odorless and tasteless.

2. Solubility Sodium alginate is easily soluble in water, but insoluble in organic solvents such as ethanol, ether. It dissolves in water to become a viscous liquid. Sodium alginate powder becomes wet when it meets water. The hydration of the particles makes its surface sticky, and then the particles quickly stick together to form clumps, which are completely hydrated and dissolved very slowly. If the water contains other compounds that compete with alginate, sodium alginate will be more difficult to dissolve in water. Sugar, starch or protein in water will reduce the hydration rate of sodium alginate and the mixing time will be extended. The pH value of 1% aqueous solution is 6-8. When pH=6-9, the viscosity is stable. When heated to above 80ºC, the viscosity decreases.

3. Toxicity Sodium alginate is non-toxic. It is stipulated in Table A.2 of GB2760 that sodium alginate can be used in various foods as a thickener in appropriate amounts according to production needs.

4. Binding property with other ions Among the metal salts of alginate, except for Na ions, K ions, Mg ions, and ammonium ions, other metal salts are insoluble in water. Using this property, the colloidal solution of sodium alginate is contacted with calcium ions to form calcium alginate gel. The gel formation process can be controlled by adjusting the pH value, selecting appropriate calcium salts, and adding phosphate buffers or chelating agents.

5. Stability Dry sodium alginate is quite stable when stored at 25ºC or below in a well-sealed container. The properties of sodium alginate solution are stable at pH 5-9. The calcium gel formed by sodium alginate is a thermally irreversible gel.

3. Application of Sodium Alginate in Food Industry

Sodium alginate is an indispensable water-soluble dietary fiber for human body. It has auxiliary therapeutic effect on preventing colon cancer, cardiovascular disease, obesity and accumulation of lead and cadmium in the body. It is known as "health and longevity food" in Japan and as a wonderful food additive in the United States. As a kind of alginate, it is widely used in food field because of its good thickening, film-forming, stability, flocculation and chelating properties.

1. Functional food Sodium alginate is an indispensable dietary fiber for human body. It has unique nutrition. It can combine with organic matter, reduce cholesterol in serum and liver, inhibit the increase of total fat and total fatty acid concentration, improve digestion and absorption of nutrients, and inhibit the absorption of harmful elements such as radioactive strontium and cadmium in the body. 3. Adding 0.2%-0.5% sodium alginate to the production of noodles and instant noodles can significantly increase the viscosity, prevent brittleness, and improve the gluten value to a certain extent. 7. When producing ice cream, popsicles, and ice cream, 0.1%-0.5% sodium alginate is generally added as a stabilizer for cold drinks. The mixture is uniform, easy to adjust the fluidity of the mixture when it is frozen, and easy to stir. The finished product has good shape retention, smoothness, and good taste. It does not form ice crystals during storage, and can stabilize the air bubbles in it. The expansion rate of the product is increased by about 18%. Increase the output by 15%-17%, and make the product soft and elastic.

8. Adding 0.3%-0.8% sodium alginate to meat products can retain water, oil, increase elasticity, increase crispness, and improve slicing properties. At the same time, making it into bionic fat can reduce costs and is good for health. When reorganizing meat products, it can also increase the utilization rate of minced meat, with high bonding strength and a wide range.

9. The application of sodium alginate and calcium ions to form gel and film. The fun and leisure products produced have a good taste. After forming beads, they are put into the mouthpiece and wrapped with various flavors, pigments and other auxiliary materials.

10. Edible film materials At present, the use of animal films to make sausage, red sausage and other food casings is decreasing. In addition to using non-toxic high-molecular substances instead, sodium alginate is also used to make casings. The characteristics of calcium alginate gel produced by sodium alginate solution and calcium salt can be used as a fresh-keeping film for fish, meat, and fruit foods.
