Definition: Alkaline protease refers to a protease with an optimal pH in the alkaline range (usually pH 8.0 - 11.0).
Source: Mainly produced by microbial fermentation, such as Bacillus, Aspergillus and other microorganisms can secrete alkaline protease. In addition, there are also alkaline extracted from animal pancreas and other tissues, but the cost is relatively high, and large-scale applications are mostly produced by microbial fermentation.

Structural characteristics
The active center of alkaline protease usually contains amino acid residues such as serine, histidine and aspartic acid, which play a key role in the catalytic process. Its structure has a certain flexibility and can maintain a stable three-dimensional structure in an alkaline environment, thereby maintaining the activity of the enzyme.

Mechanism of action
Alkaline protease works by hydrolyzing peptide bonds in protein peptide chains. Under alkaline conditions, the active center in the enzyme molecule specifically binds to the protein substrate, and then breaks the peptide bonds through a series of acid-base catalysis and covalent catalysis, breaking the protein into smaller peptide segments and amino acids.

Application fields
Detergent industry: It is one of the important ingredients of enzyme detergents and can effectively remove protein stains such as blood stains, milk stains, sweat stains, etc. on clothes.
Leather industry: It is used for leather depilation and softening, which can remove hair and non-fibrous protein on the leather surface, make the leather soft and smooth, and improve the quality and processing performance of the leather.
Food industry: It has applications in meat tenderization, protein hydrolyzate production, beer clarification, etc. For example, using it in meat processing can partially hydrolyze collagen and other proteins in meat, thereby achieving the purpose of tenderizing meat.

Production and preparation
In industry, alkaline protease is mainly produced by microbial fermentation.
