Zein, also known as alcohol-soluble protein (Zein), is a food protein widely found in plants, mainly derived from corn. Its chemical formula is N/A, molecular weight is 0, and CAS number is 9010-66-6. Zein is easily soluble in 80%~92% ethanol or 70%~80% acetone, but insoluble in water or anhydrous ethanol
Chemical and physical properties
Zein is usually yellow or light yellow flakes or powder, shiny, odorless and tasteless. Its melting point is between 266-283°C, and its density is 1.226 g/cm³ (25°C).
Corn protein is insoluble in water, but soluble in a variety of organic solvents, such as ethanol and acetone, and can also be dissolved in alkaline solutions (above pH 11.5).
Application areas
Corn protein is widely used in many fields due to its excellent film-forming, gelling and antioxidant properties:
