Acrylamide (AM) has a relative molecular mass of 71.08, a chemical formula of C3H5N0, and a molecular formula of CH2=CH-CONH2. It is an unsaturated amide with a melting point of 84.5°C and a boiling point of 125°C. It is a white crystalline solid at room temperature and pressure. It is not easy to volatilize and is easily soluble in polar solvents such as water, ethanol, acetone, ether. It is easy to polymerize at high temperatures above 84.5°C or under the action of light and oxidants.
Acrylamide is the most important and simplest type of acrylamide. It has a wide range of uses. It can be used as a raw material for organic synthesis and polymer materials. It is mainly used to produce polyacrylamide, which is known as "agent for all industries", "industrial MSG" and "universal product". In daily life, acrylamide can be found in cosmetics, smoking, starch-rich foods cooked at high temperatures (>120°C) and drinking water.
Acrylamide is highly water-soluble and can enter the body through the skin, mucous membranes, respiratory tract and gastrointestinal tract. It has genotoxicity, immunotoxicity, neurotoxicity, reproductive toxicity and carcinogenicity. The International Agency for Research on Cancer (IAF) classified it as a Class II carcinogen in 1994 and listed it as one of the second batch of substances of high concern under the REACH regulation. On October 27, 2017, the World Health Organization's International Agency for Research on Cancer published a list of carcinogens: acrylamide is in the Class 2A carcinogens.
