Coconut oil fatty acids are mainly composed of a mixture of caprylic acid, capric acid, dodecanoic acid, tetradecanoic acid, hexadecanoic acid, octadecanoic acid, and octadecenoic acid, which together constitute the main chemical components of coconut oil. Coconut oil fatty acids also contain palm kernel oil fatty acids, which have a slightly coconut oil-like smell, a boiling point range of 239.7°C to 365.2°C, a melting point of 20°C to 28°C, and a density of 0.84 to 0.86 g/ml (75°C). The fatty acids in coconut oil are mainly lauric acid, accounting for 50% of the total. This is a medium-chain fatty acid (MCFA), which has a different effect on the human body than common long-chain fatty acids. It has the effects of promoting the utilization of branched-chain amino acids, increasing protein levels, regulating serum lipoproteins, and increasing high-density lipoprotein cholesterol, and also has the effect of reducing serum free fatty acids.
The content of saturated fatty acids in coconut oil is as high as 80% to 90%, of which lauric acid accounts for 47% to 54%, which is the main saturated fatty acid in coconut oil. Other components of coconut oil include 18% myristic acid, 10% palmitic acid, 2% stearic acid, etc. These characteristics of coconut oil make it easy to digest and absorb in the body as an edible oil. The lauric acid in it can also be easily transported to the liver and directly converted into energy and other metabolites instead of being stored as fat. This characteristic is beneficial to maintaining good health.
