Structural characteristics

Mechanism of action
Alkaline protease works by hydrolyzing peptide bonds in protein peptide chains. Under alkaline conditions, the active center in the enzyme molecule specifically binds to the protein substrate, and then breaks the peptide bonds through a series of acid-base catalysis and covalent catalysis, breaking the protein into smaller peptide segments and amino acids.
Application fields
Detergent industry: It is one of the important ingredients of enzyme detergents and can effectively remove protein stains such as blood stains, milk stains, sweat stains, etc. on clothes.
Leather industry: It is used for leather depilation and softening, which can remove hair and non-fibrous protein on the leather surface, make the leather soft and smooth, and improve the quality and processing performance of the leather.
Food industry: It has applications in meat tenderization, protein hydrolyzate production, beer clarification, etc. For example, using it in meat processing can partially hydrolyze collagen and other proteins in meat, thereby achieving the purpose of tenderizing meat.
Pharmaceutical industry: It can be used to produce medicines such as protein hydrolyzates and amino acid injections, and can also be used as an external medicine for debridement and anti-inflammatory.
Production and preparation
In industry, alkaline protease is mainly produced by microbial fermentation. First, a microbial strain with high alkaline protease production is screened, and then it is inoculated into a fermentation medium and fermented and cultured under suitable temperature, pH, ventilation and other conditions.
