Tartaric acid is an important organic raw material, widely used in the pharmaceutical, food, chemical and textile industries.

Tartaric acid, with the chemical formula C4H6O6, is a carboxylic acid with multiple uses and functions. It generally exists in the form of potassium salt in the fruits of various plants, such as grapes, tamarind, tamarind, etc. In the food industry, tartaric acid is mainly added to beverages as an antioxidant and acidulant to give food a sour taste. In addition, it is also used as a raw material for baking powder and has properties that other edible organic acids do not have. Therefore, it can also be used as a chelating agent, antioxidant synergist, flavoring agent, and fast-acting leavening agent in some occasions. In the pharmaceutical industry, tartaric acid can be used as a pharmaceutical intermediate and a high-efficiency splitting agent. In the chemical industry, tartaric acid can be used to produce tartaric acid salts and tartaric acid esters as a cleaner and polish for metal surfaces. In the textile industry, tartaric acid and tannin can be used together as a dyeing agent for acid dyes. Tartaric acid was first extracted from the byproduct of winemaking. Due to the presence of two asymmetric carbon atoms in the molecular structure, there are left-handed isomers (L-tartaric acid) and right-handed isomers (D-tartaric acid), meso-isomers (MESO-tartaric acid) and racemic isomers (DL-tartaric acid). Tartaric acid is highly soluble in water and is soluble in polar solvents such as methanol, ethanol, and glycerol. It is slightly soluble in ether. These characteristics make tartaric acid widely used in many fields such as food, pharmaceuticals, light industry, and chemical industry. 2.
